As part of the fight against food, Nordic Choice Hotels has brewed beer on bread from the hotels. 80 kilos of bread have become almost 3,000 bottles of beer.
The beer, called “No Crumbs Left”, has been brewed at Klackabacken Brewery in Kristianstad and will be available at some selected hotels in Nordic Choice Hotels and served in conjunction with the EAT Food Forum in Stockholm on 11-12 June.
Innovative struggle against food winnings
Reduction of food business is one of the main themes of this year’s EAT Food Forum. Over four years, Nordic Choice Hotels has supported various entrepreneurs through the Local EAT Award. This year, the Group has stood for innovation, with a tasty solution to a specific challenge in its own industry.
“We are constantly working on finding new approaches to combating food choices within Nordic Choice Hotels. Producing brewed beer is another way for us to reduce food welfare and approaching the goal of 20 percent food cut by 2020, “says Cathrine Dehli, Director of Sustainability at Nordic Choice Hotels.
The project is a pilot project and initially, four hotels in Skåne have contributed with a total of 80 kilograms of dried leftover bread, which generates 1000 liters of beer. The bread replaces about 40 percent of malt.
“Food work is a major issue in the entire hotel industry. One common way to make use of leftover bread is to make croutons. But there is a limit to how much croutons a hotel can serve. We hope that in the long term we will be able to scale up the beer project in all our hotels so that a breadmill is not over, “concludes Cathrine Dehli.
